Han used it cut open the tauntaun so you don't need to be a Force user to use a lightsaber, at least as a tool. To do anything effective with it in a fight like deflect blaster bolts does require Force sensitivity and enhanced reflexes though. It's also handy when you decide to throw your saber if you can retrieve it telekinetically.
Han Solo used one in Empire so anyone can use them.
Using it effectively in a fight may be a different matter but if we go by what's canon, Grievous was able to kind of brute force it based on numerical superiority. Obi-Wan still had better technique, especially his finely-honed "lopping off limbs" technique.

I think they say that anyone can use them, but only the Jedi have the mental blah blah blah to do it without killing themselves.
Pretty much, yeah. When you think about it, the balance of the weapon would be odd (I'm guessing weighted primarily towards the hilt) and who knows what the tactile feedback would be like? Sabers can lock so there has to be some substance to them and it's during those incidents that strength becomes more of a factor. Also, I'm only guessing but there must be some Force techniques to absorb thermal energy, otherwise I don't know how Jedi can cut through thick doors without getting scalded or burnt by the proximity to the melting metal.
